Crack Addict

When I told my mum the name of this recipe she said: ‘ CRACK?!!! As in COCAINE?!?’  And she was completely right. Ok well not completely seeing as there actually isn’t any drugs in the recipe but they are just as addictive (disclaimer there is no scientific proof to back this up!) aswell as being vegan, dairy free, gluten free and refined sugar free!


So what was the inspiration behind making a seriously addictive snack?? There really wasn’t much but I wanted to create a fridge-cake-type snack that kept you wanting more but didn’t leave you feeling guilty when you gave into temptation. Obviously I’m not nutritionist and these are definitely not as healthy as an apple. However when you compare them to regular ol’ fridge cake this one reigns supreme in nutrition as well as giving it a run for its money in the taste department.  The recipe is really quite simple and mimics that of fridge cake, can be whipped up in about 15mins and kept in the freezer for however long it lasts! However in my experience this isn’t particularly long! Feel free to experiment with different nut combinations and nut butters!

Nut Crack, Makes 30 pieces: 

Ingredients
1 cup cashews
1/2 cup peanuts
1/2 cup pecans
2tbsp coconut oil, melted
1tbsp maple syrup
2 tbsp cashew butter

1/4 cup coconut oil, melted
1/2 cup cacao
3 tbsp maple syrup
Sea Salt (optional_

Method
In a food processor blend the cashews, peanuts and pecans until finely chopped. Mix in the coconut oil, maple syrup and cashew butter. Press into a dish that has been lined with cling film. Place in freezer until solid. Whilst that is firming combine the coconut oil, cacao and maple syrup and pour on top of the nut layer. Top with sea salt if using.  Place back into freezer. Once firm cut into pieces and store in freezer until ready to eat!
