Right...so technically I used fusilli for this, but let's not be pedantic OK? 

Now we've got that sorted, let's delve into the wonderful world of....

GOATS CHEESE AL FORNO!!!

If you haven't heard of it then SHAME ON YOU, and if you have heard of it then you know what I'm on about. It's quite frankly heaven on a plate; tangy goats cheese, comforting pasta and some veggies thrown in for good measure. I first discovered this at Prezzo (an Italian chain restaurant) and never looked back. I created my own spin on it when a desperate, hungover me wanted to order it from Deliveroo and was shocked to find out that I couldn't order it... so in typical Sasha style, I made it!! I dare say it's better than the real thing.


I use gluten free pasta (I've also been experimenting with red lentil pasta and green pea pasta as high-protein gluten-free alternatives) but obvs go for the real stuff if you can! Once you've got a feel for the dish mix it up, add your own style! Swap out different veggies, try different types of pasta (it actually makes a difference!) just make sure to keep the goats cheesy goodness! I promise this is one of the best hangover cures out there* 




*this has not been scientifically proven but if ya know what's good for ya try it out 


Makes 2 big portions

Ingredients: 
200g pasta, boiled and drained
150g chestnut mushrooms, sliced 
1 red onion, sliced
60g spinach, blanched
200g tomato pasta sauce/passata (homemade or jar) 
50g grated mozzarella cheese (optional or can be substituted for another other cheese that melts well)
50g goats cheese, cut into chunks
1 tablespoon pesto, (for allergen reasons I use Scala free from pesto, such a good alternative!!)
Parmesan to serve

Method:
Pre heat oven to 180C
Heat some oil in a pan over a medium flame and sauté mushrooms and onions, season with salt, pepper and some garlic granules. In a mixing bowl combine the pasta, mushrooms, onions, spinach, tomato sauce and half of the mozzarella.  Using a skillet (preferred) or oven-safe dish, pour half the pasta in and layer with half of the goats cheese. Pour the rest of the pasta on and top with the rest of the mozzarella and goats cheese. Bake in the oven for 20 minutes or until golden brown. Finish with a drizzle of pesto and some grated parmesan.
