An Ode to Brunch

WARNING! WARNING! ALERT! ALERT!

I LOVE BRUNCH!

Is it breakfast? Is it lunch? No the beauty of it is that it is both!

Arguably the best invention to occur, and definitely my favourite part of the day - so it seems only fitting that my first post be about this glorious meal. Why do I love 'brunch' so much you ask? Obviously if you frequently 'brunch', then you'll know the infinite amount of reasons and if you don't brunch often....I suggest you start, like, now. GO. NOW.

Hopefully, the sinful people that have yet to experience 'brunch' have listened to my advice and gone! So, for all us 'brunchers', I'll stick to my main reasoning behind this obsession. EGGS. 

Don't you just love eggs? Or is it just me? Fried, scrambled, omelet, soft boiled, (if you like hard boiled leave now, we can't be friends) and my ultimate favourite; poached. Whichever way you crack it, eggs are the best food group ever! Wait...are they even a food group? Well, even if they aren't I'm making them one. My egg addiction is so strong that I actually lived off them as my main food source for the majority of 1st year uni - I even had a contraband egg maker in my room..No yolk!

OK...enough with the frankly poor egg puns and on to the main event - my staple of eggs, smoked salmon, smashed avocado on a courgette fritter (still not sure what to call it?!?)..I know such a basic bitch. Sorry not sorry. So here it is:

Ingredients:
3 eggs
1 courgette, grated
2 tablespoons flour (gluten free or normal)
Smoked Salmon
1/2 Avocado
Lime Juice
Lemon Juice
Chilli Flakes
Garlic Granules
Salt and Pepper, to taste
Oil (I usually use avocado oil)

Method:
In a bowl combine courgette, flour, 1 egg and salt/pepper and set aside. In a separate bowl, mash avocado and combine with a squeeze of both lime and lemon juice, sprinkle some chilli flakes and garlic granules - add salt and pepper to taste. Heat up a small amount of oil in a pan over a medium heat and once hot, add the courgette mixture. Once set and lightly browned flip and cook the other side( similar to a pancake). Once fully cooked place on a plate to cool slightly. With the remaining two eggs cook to your preference; I tend to either fry or poach mine. Now its time to plate up, spread the avocado mix onto the courgette fritter, top with smoked salmon and eggs. Enjoy!!!
