Bank Holi-YAY!

The sun is shining and you're having a 3 day weekend - what's not to love about that?
I know my classic go-to Bank Holiday plans are always to go out for brunch but when the weather is this good, who can be bothered to sit inside a restaurant???

Instead why not make your own feast at home and sit in the garden!

The beauty of making your own brunch?? You can have WHATEVER you want! Extra smashed avo? Grilled halloumi? Poached eggs? I'll take it all thanks, with a side of pancakes! The key to the perfect brunch is having options! I firmly believe that having loads of bites of different things is way better than loads of bites of the same thing..duh!

As the self proclaimed Queen of Brunch I order you to include these corn fritters in all of your brunch adventures cause they are amazing! A perfect substitution for bread (and GF!) or just a way to mix up your brunch these fritters are sure to be a hit! Perfect by themselves or even better with eggs (obviously!) you won't regret making these!

Corn Fritters makes 6 fritters:




Ingredients
2 Eggs
2 cans Sweet Corn
1 Spring Onion, roughly chopped
2 tablespoons flour, GF or normal
1 tsp chilli flakes
1tsp baking powder

Method
Simply blend in a food processor until combined and sweetcorn is roughly chopped. Heat some oil in a pan and drop spoonfuls in the pan to create your fritters. Once they have set and bubbles have formed around the edges, flip and cook until set again. Serve with whatever you fancy!
