Do the Hokey Poké

The poké trend has blown up over the past year and its one I can fully get on board with! Its so simple yet delicious and extremely satisfying! If you don't know what it is it's a dish originating from Hawaii that was traditionally just tuna with some citrus juice with rice but since its travelled over its been adapted to essentially being a deconstructed bowl of sushi- what could be better than that, eh? There really aren't any hard and fast rules about what you have to put in your poké, which makes it that much better as you can constantly switch it up an experiment! I usually use raw salmon but it will work with any raw fish (as long as its sushi grade!) or if thats not your scene why not try some tofu or cooked teriyaki chicken? Honestly anything goes but heres my fav combo!

Ingredients: 
100g raw sushi grade fish, cubed
1 tbsp sesame oil
1 tbsp mirin
1 tbsp soy sauce
1 tbsp rice wine vinegar
1/2 avocado, cubed
1 tbsp lime juice
1 tbsp lemon juice
1 tsp garlic granules
1 tsp chilli flakes
1 spring onion, sliced
25g shelled edamame beans
25g seaweed salad (I get mine from my local japanese supermarket)
50g quinoa, boiled

Method: 
Combine the cubed fish with the sesame oil, mirin soy sauce and rice wine vinegar. Allow to sit for up to 5mins so the flavours infuse but the vinegar doesn't start to 'cook' the fish. In a separate bowl combine the avocado, lime juice, lemon juice, garlic granules, chilli flakes and spring onion. Bring everything else together in the bowl!
