Need Brunch Inspo?

I thought that as the self-proclaimed Queen of Brunch, I would create a post solely dedicated to all my brunch recipes that I will continuously update as I make more - a one-stop-shop for all your brunch needs!


#1 Parsnip Latkes - makes 6 latkes


Ingredients:
1 large parsnip, peeled and grated
1 white onion, grated
1 egg
2 tbsp flour (GF or normal)
Salt & Pepper

Method:
Using a tea towel squeeze out the excess water from the parsnips and onions. This is super important if you want crispy latkes! Mix in a bowl with the rest of the ingredients. Shape into circles and add to a hot pan with a couple of tablespoons of vegetable oil. Cook until crisp and golden on both sides!


#2 Quinoa Granola 

Ingredients: 
1 cup puffed quinoa
1/2 cup shredded coconut
1/2 cup of nuts and seeds of your choice
1/4 cup raw cacao (not cocoa powder!!)
1/8 cup coconut oil, melted
1/8 cup maple syrup
2 tbsp honey

Method: 
Combine all ingredients in a bowl until mixed and all ingredients are evenly distributed. Pour onto a sheet tray and bake at 180C for 15 mins, Allow to cool completely.


#3 Savoury Waffles - makes 2 waffles 

Ingredients: 
1/2 cup flour (GF or normal)
1/2 cup milk (I use almond milk)
1/3 cup grated parmesan
1 tbsp mustard
1 egg
1/2tsp baking powder
Salt and Pepper

Method: 
Whisk all ingredients in a bowl, heat up waffle maker per instructions. Cook until golden brown and crisp!
