Send Noods!

I think it is safe to say that winter is officially here. It's getting colder and darker and a lot more rainy (I hope you enjoy my unsolicited weather update) which means it is now completely socially acceptable to bundle up in front of the TV with ALL the food and never leave the house, right? This ideal way of spending a day is perfect for those recipes that need a little more time and love but are so worth the wait!!! Enter my Chicken Ramen/Pho cross!


Steaming soup with all the warming spices, soft noodles and some veggies that makes you feel like your having a bowl of hugs! Don't let the slightly long list of ingredients scare you off because trust me it is soooo worth it!! This soup is also a great base that you can just sub in the rest of the ingredients to your personal preference. Vegetarian? Sub the chicken for some tofu! Don't like rice noodles? Sub it for ones you love! However you customise it just be sure you make it cause you definitely won't regret it!

Homemade Chicken Pho (serves 2)


Ingredients:
1 onion, chopped
2 carrots, choppped
3tsp fresh ginger, grated
2 cloves garlic, grated
2 sticks of lemongrass, harder, outer layers removed
2 tbsp lime juice
1 tbsp brown sugar
1tbsp fish sauce
1tbsp soy sauce
1tsp cinnamon
1 star anise
1 tsp dried chilli flakes
1litre boiling water with stock cube
2 chicken breasts
100g rice noodles (or whatever noodles you prefer)
3 spring onions, finely sliced
8 mushrooms, sliced (I like to use shiitake)

Method:
In a large saucepan sauté the onion and carrots until browned. Then next 11 ingredients and simmer for 20mins. Drop the chicken breast in and allow to poach for a further 10-15mins or until cooked through, then remove the chicken breasts. Try the broth, if it is still weak keep it simmering for a further 20mins to allow the flavours to develop more, add more spices or sauces if you feel it needs it. Whilst the broth is cooking, prepare the noodles according to packet instructions but stop the cooking 1-2mins before they are ready as they will continue to cook when placed in the broth. Pan fry the mushrooms. Remove the broth from heat and strain the liquid so none of the whole spices remain. Slice the chicken. Put your noodles/spring onions/mushrooms/chicken in the bowl before pouring the broth on top.
